Librarians' Note: Although people in the U.S. don't usually think of Mexican cuisine as vegetarian-friendly, UTSA's cookbook collection includes a number of vegetarian cookbooks such El Cocinero Vegetariano and Cocina Vegetariana Mexicana (next picture), which offer a combination of "international" vegetarian recipes and vegetarian versions of traditional Mexican dishes, such as chiliquiles.
